Man Fu Yuan at Intercontinental Singapore
Whether you have a cosy group of two to five or a boisterous party of 10, Man Fu Yuan has various prix-fixe menus to cater to all.
The five-course Blissfulness menu, for instance, is tailored for a group of five, with signatures such as the Man Fu Yuan Abundance Treasure Pot brimming with over 18 premium ingredients. Think five-head abalone, rock lobster, premium sea cucumber, tiger palm mushroom, dried scallop, South Africa fish maw and dace fish balls. And for the extravagant seven-course Harvest Prix-Fixe Menu, you can look forward to Double-boiled Collagen Soup served in a coconut husk, Steamed Atlantic Cod Fish Fillet, and Smoked Roasted Irish duck with Wild Mushroom and Truffle Sauce.

Si Chuan Dou Hua at Parkroyal on Beach Road and UOB Plaza
If you’re up for yusheng with an exotic spin, you’d want to make a reservation at Si Chuan Dou Hua. This year, it’s doling out a Prosperity Fugu Yusheng featuring fugu sourced from the illustrious Shimonoseki city in Japan, available at both outlets.
Over at the Parkroyal on Beach Road, you’ll be savouring executive Sichuan chef Dave Lai’s signature dishes, such as robust stir-fried Sea Cucumber with Asparagus and Silver Fish Sauce, as well as Braised Premium Bird’s Nest with Fresh Crab Meat Soup (available in selected set menus).
And if you’re making your reservations at the UOB Plaza restaurant, look forward to Waxed Meat Rice with Foie Gras and Salted Egg wrapped in Lotus Leaf, as well as Double-boiled Hasma with Ginseng and Sea Coconut served in Whole Coconut by executive Cantonese chef Hoo Chee Keong.

Shang Palace and Reunion Gala Dinner at Tower Ballroom, Shangri-La Singapore
Shangri-La Singapore’s Shang Palace is marking the start of the Year of the Dragon with four resplendent eight-course menus curated by executive Chinese chef Daniel Cheung. Eat your way through delectable treats running from Braised Bird’s Nest Broth to Crispy-fried Pine Leaf Crab Claw stuffed with Shrimp wrapped in Filo Pastry to buttery soft Steamed Atlantic Cod Fish Fillet with Crystal Noodles in a savoury black bean sauce. Of course, there’s the Fortune Yu Sheng, with Norweigian smoked salmon, to kick things off.
And on Feb 9 itself, you can enjoy your reunion dinner with the live streaming of CCTV’s Spring Festival Gala at the hotel’s resplendent Tower Ballroom. From 6.30pm, savour a celebratory eight-course menu with delicacies including Fortune Yu Sheng with Norwegian Smoked Salmon, Braised Bird’s Nest, Braised Whole Abalone, Wok-fried Prawns with X.O. Pan Pacific Orchard
Pan Pacific Orchard is presenting its inaugural Lunar New Year menu, curated by the newly appointed veteran Chinese master chef Leung Wing Cheung.
Made for intimate gatherings, the hotel’s 16-seater The Chairman’s Lounge private dining space is available for booking, with exclusive set menus. Each starts with the Prosperity Exotic Garden Yusheng starring a medley of ingredients, including over 20 fresh greens and fruits, sliced abalone, fresh lobster, and whisky-infused sea cucumber, all drizzled over with an aromatic black truffle sauce.
Then dive into celebratory highlights such as pan-seared dried oyster with duet of traditional crispy chicken, tender flaky wild-caught giant soon hock prepared two ways (steamed and perfectly deep-fried in ‘shun de’ style), and crispy noodles with Australian lobster meat swimming in a moreish egg gravy. Desserts like double-boiled bird’s nest served in a mini pumpkin and peach resin with mixed fruits (they vary based on the menu chosen) conclude the meal.

An elegant celebration awaits at Cantonese fine dining outfit Summer Pavilion, which has six- to eight-course lunch and dinner set menus that start with a yu sheng platter. Golden Peony at Conrad Centennial Singapore
Conrad Centennial Singapore’s award-winning Cantonese fine-dining restaurant Golden Peony helmed by chef Ku Keong is so well-received, that regulars often place reservations well in advance.
Chef Ku’s yearly roasted suckling pig gets a luxurious twist this year, stuffed with fried chicken kimchi fried rice. Min Jiang at Goodwood Park Hotel
You can’t go wrong with a feast curated by the award-winning Min Jiang Restaurant situated at the elegant Goodwood Park Hotel. Its line-up for the festive season sees tempting six- and seven-course celebratory menus. Dine on dishes like the restaurant’s signature roasted Silver Hill Irish duck, slow-braised abalone, braised spare ribs, steamed tiger garoupa, savoury stewed noodles with lobster, and many more.

Red House Seafood Nanyang has reopened its doors at Clarke Quay, and welcoming Year of the Dragon with sumptuous new creations. Highlights include the showstopping Alaskan King Crab served Two Ways (Sautéed Crab Meat in Truffle Oil and Egg White & Baked Crab Legs with Miso), as well as Crispy Roasted Chicken with Flaxseed & Sesame. There’s also Braised 8 Head Abalone, Sea Cucumber with Winter Melon Ring & Purple Cauliflower, which sits in a pool of pumpkin puree.

Rempapa
For a festive feast that nods to Singapore’s heritage, celebrity chef Damian D’Silva’s Rempapa is where to make your reservation.
Start your celebration with the Hoisin Braised Duck Croquette ($18++), before moving on to the Herbal Chicken in Lotus Leaf ($48++), cooked using a whole GG French Poulet chicken with conpoy and baby lotus roots, as well as the Teochew-Style Steamed Red Grouper. Another CNY dish is the Stir-Fried King ($18.80++), a Cantonese classic of aromatic garlic chives, juicy sea prawns, jumbo dried shrimp, conpoy, pickled celtuce and cashew nuts.

Yun Nans
Chinese restaurant chain Yun Nans has six Chinese New Year set menus to whet your appetite. Its popular Prosperity Hot Pot is making a welcomed return – the golden broth that’s been stewed for six hours brims with ingredients like roast pork belly, tender bamboo pith, premium sea cucumber, abalone, cordyceps flowers, and more. Other set menu dishes “Bi Feng Tang” Style Pork Ribs with Truffles, Steamed Tiger Grouper and Braised Truffle Ee-fu Noodles with Fresh Scallop.
Each set comes with the chain’s signature rose pastry, a flaky traditional Yunnan dessert, the Prosperity Abalone Yu Sheng which has plump baby abalone and shredded white carrot.

Crystal Jade’s group of restaurants
With Crystal Jade’s diverse portfolio of fine and casual dining restaurants across the island, there’s something to suit every family, and highlights to look forward at each brand.
At flagship Crystal Jade Palace (Takashimaya) for instance, expect specialties like a lavish trio of Lobster, Caviar & Foie Gras Pate on Puff Pastry and a nourishing soup of Double-boiled Kampong Chicken with Sea Whelk, Chanterelle & Sea Cucumber Flower.
And at Crystal Jade Golden Palace (Paragon), you’ll be dining on tender Pan-seared South African Abalone with mushrooms and crispy deep-fried leek. On top of it sits succulent poached Boston lobster tail and sweet torched raw scallops.
